ThinkFoodGroup Debuts China Chilcano

Multiconcept operator ThinkFoodGroup
has introduced its newest concept,
China Chilcano, to the Washington,
D.C. marketplace. Located in the Penn
Quarter district downtown, the contem-
porary Peruvian restaurant celebrates
Peru's diverse culinary heritage, includ-
ing its native Criollo, Chinese Chifa and
Japanese Nikkei cuisines. The name
pays homage to Peru's celebrated fsh
stew and one of its established national
drinks, the Chilcano.
Spanish architect and designer
Juli Capella designed the 158-seat
restaurant to refect the spirit of modern
Peru. Highlights include a wall mural
of a foral-tattooed femme fatale by
Cecilia Paredes called 'Both Worlds,"
distressed wood foors and a traditional
sunken Japanese dining table inspired
by the menu's Nikkei infuences. Red
neon lights evoking the ancient designs
found in Peru's Nazca desert hang from
the ceiling, and a prominent 300-gallon
fsh tank celebrates the menu's extensive
seafood offerings.
ThinkFoodGroup, founded by award-
winning Spanish chef José Andrés and part-
ner Rob Wilder, is the creative force behind
a portfolio of concepts, including minibar
by José Andrés, Jaleo, America Eats Tavern
and The Bazaar by José Andrés.
