When the success of her Grand Central Bagel Café in Lancaster, Penn., allowed owner Janae Smiley to expand into the storefront next door, she was faced with just such a decision. "Grand Central has been around for 21 years," Smiley says. "We started in 1995 and expanded the business from one side of the unit to taking over the second side. So we inherited an old floor that I just went with when we put on the addition. We have five to six hundred people walking through here every day, so it gets abused a lot."
